Pecans!

| My dad brought me a very large bag of Louisiana pecans. Good pecans are hard to find and I reasoned worthwhile to bring in one’s suitcase when they come to visit. |

Today, Caleb and I made a chocolate cake with chocolate frosting WITH pecans. It also happens to be my favorite cake from childhood. My mother and Grogreen (my grandmother, Betty Lou Horne Pettigrove - yes, Betty Lou not Elizabeth Louise in case you are wondering) used to make it and us kids would eat the whole thing pretty quickly. Anyway, it is a great recipe to make with a small child as 1) there are few ingredients 2) it is pretty much idiot-proof 3) it bakes in only 20 minutes 4) it is yummy.
Betty Lou’s Chocolate Sheet Cake
2 c. flour
2 c. sugar
4 T. cocoa
1 t. cinnamon
1 c. water
2 sticks butter2 eggs
1/2 c. buttermilk
1 t. soda
1 t. vanilla
Put first 4 ingredients in a bowl. Boil water and add butter. Add to dry ingredients. Add eggs, buttermilk, soda and vanilla. Mix well. Pour into greased sheet pan. Bake at 425 for 20 minutes.
Icing:
1/2 c. pecans (optional - but not really)
1/2 stick butter
3 T. cocoa
1 1/2 c. powdered sugar
1 egg
1 t. vanilla
Mix all together and spread on slightly warm cake.
Voila! The finished product:

My mom brought me two large bags of shelled pecans from Louisiana over Thanksgiving… they are incredible! (or were, I was planning to save them to make spiced pecans for Xmas gifts but I went through the two whole bags all by myself even before the holidays. A handful here a few handfuls there… hard to resist!) I did make some sugared pecans but with the regular old Trader Joe’s variety… good recipe: melt butter, add sugar and a little cinnamon, toss with pecans then bake until golden brown. Good over ice cream.

That cake is the best! I used to try to sneak a few pieces before you kids gobbled the whole thing up but you all were always quicker than me.

This reminds me of what my mom called “funeral cake.” Basically a chocolate sheet cake that for some reason got made whenever someone died. Every family funeral I have ever been to on my mom’s side of the family had at least one of these cakes.
